Ghee and sugar are beaten until smooth and creamy, then elaichi is mixed in.
The dry mix is folded to a short dough — never overworked.
Rolled into small balls and baked at 180°C for 20–22 minutes, until light golden and cracked on top.
Bowls and trays are sanitised between batches. Finished bakes are handled with gloves and packed the same day they leave the oven.

Pure desi ghee, elaichi-warm, and cracked across the top the way a real nankhatai should be. Besan and a spoon of suji give it that sandy bite that collapses the moment it meets hot chai. Also in jowar and ragi.
